Coumarin has traditionally been used as a vanilla substitute in processed foods (especially tobacco), but many countries have restricted its use.

Some traditional foods are made from plants that contain coumarin, which is undoubtedly an important spice in these foods. In Poland and Germany, people are used to adding plants such as caryophylla to alcoholic beverages in order to produce a fresh, special, refreshing smell, which is mainly coumarin. This type of product is not dangerous to consumers, but you should avoid eating too much of this food.

In plants, coumarins can also act as natural insecticides to avoid plant disturbances. Many chemicals in the coumarin family are used to produce pesticides, and some are even used to kill larger rodent pests. Some consumer products may have some knowledge of certain coumarin family chemicals, such as the best known anticoagulant warfarin, which can be either injected or taken orally depending on the patient's needs.
